Perhaps perpendicularly to the use of 'posthumously animated', I do think Plagueis would really enjoy using 'undead' to refer to living people, not only because it satisfies his desire for precision but because others find the word choice unsettling.

that is nice. I'm sure that turn of phrase was at the time inspired by Little Lost Maul!

This also reminds me of how I initially interpreted the concept of "turn undead" in the game NetHack--I was pretty sure it meant to become undead yourself? somehow? (but iirc the wiki says it means something about like ...repelling undead monsters? (that's just how the game refers to pretty much npcs and not my value judgement) but you can only actually do it under certain circumstances...)
